-1 can black beans
-1 can mexicorn
-1/2 diced red bell pepper
-several cherry or grape tomatoes, cut in half
In a food processor, blend the following for the dressing:
-juice of 1 lemon
-juice of 1 lime
-2 cloves garlic
-1 handful fresh cilantro leaves
-2-3 tbsp olive oil
-salt, pepper, paprika, garlic powder (a sprinkling of each)
Pour dressing over bean mix, toss, and refrigerate.
