Toss the following together in a bowl:
-1 can chickpeas, drained
-1 small can black olives, drained
-1/2 red bell pepper, diced
-1-2 cloves garlic, minced
-salt & pepper to taste
Whisk together:
-juice of 1 fresh lemon
-3 tbspn tahini
-1 tbspn sesame oil
Pour dressing over chickpea mix, top with fresh chopped parsley.
